GLUTEN FREE BANANA MUFFINS
These banana muffins are amazing!!! As we continue on our gluten free journey I am constantly creating new recipes. This is one of those recipes!! I originally had followed a recipe in a book but continued to tweak it and make it my own. Sometimes I like to cut the amounts of fat and sugar in recipes or use a better version of a sweetener or fat to make the recipe healthier. My kids love these!! I make a big badge , leave them wrapped on the counter and the kids can eat them for breakfast or snack. These are so good you would never imagine that they weren't made the traditional way and that they are gluten free. I sometimes throw in a handful of extra dark chocolate chips for an extra treat!!

Recipe:
4 ripe bananas
3/4 cup unsweetened apple sauce
1 cup agave syrup and or Pure maple syrup
( can use 1 or mix of both)
4 Tbsp coconut oil
2 large eggs
1 1/2 cup garbanzo bean flour
1 cup rice flour
1 1/2 tsp baking soda
1/2 tsp salt
1 tbsp pure vanilla extract
*optional : chocolate chips, walnuts, peacans
Pre heat oven to 350 degrees. Prepare muffin tins with liners or you can also use a 9" X 13" cake pan. Spray with cooking spray or line with parchment paper for easy cake removal.
Mix all wet ingredients into one bowl , set aside. Mix all dry ingredients in another bowl with whisk. Next add fry ingredients to wet mix. Mix until just blended. Add any of the optional ingredients if you choose. Place mix into pan. Bake 20 - 25 min. Bake until cake tester come out clean from center. Let cool. Enjoy!! Store in air tight container.
